Blueberries are just hella delicious and good for you which is an incredible win win considering how difficult it is to maintain a healthy and nutritious diet each day. For starters, blueberries are an excellent source of Vitamin C, which aids in the absorption of iron and promotes a healthy immune system. In addition, blueberries serve as an excellent source of antioxidants helping prevent cancer and other heart related disease. Best of all, just a half cup of blueberries a day meets our daily requirements of 5 to 9 servings a day of colorful fruits and vegetables. Blueberries are a fantastic, versatile food. Good anytime. On yogurt and granola for breakfast, or even to glaze a steak for diner. You may raise your eyebrow at that, but trust me, it’s delicious.
Seeing as springtime is here and a lot of people are going to be looking to shed that winter bulk, here’s a great idea for a salad with an awesome blueberry vinaigrette:
-1/2 cup olive oil
-1 tablespoon red wine vinegar
-1 tablespoon apple juice
-2 tablespoons balsamic vinegar*
-1 shallot clove, minced
-A small dab of Dijon
-Salt and Pepper to taste
-1/2 cup blueberries, fresh or frozen, doesn’t “really” matter, but just use fresh because you know it tastes better.
Puree the ingredients.
*And a note on the balsamic: not all are created equal. In fact, most that I find in supermarkets are pretty awful. A good balsamic should be thick, almost like maple syrup, and if you get that, it’ll do wonders. I shop at Trader Joe’s and even their “Gold Standard” leaves a bit to be desired, but if it’s all you can find, use it.
In a mixing bowl, throw in equal parts of spring mix and arugula, a little chopped asparagus, peas, almond slivers, and a few whole blueberries. Mix with dressing (but don’t drown it). Then take a serving in your hands, gently, and transfer to a bowl. Build your salad to a sort of pyramid shape, arugula holds shape really well. Crumble some goat cheese on top. And that’s it. A fantastic, colorful, healthy salad.
And most importantly, enjoy it.

Yeah blueberries are dumbass good, but I’m not tryna drop a grand on blueberries over the course of the year to eat my daily handful of them. Those little bastards are expensive. I mean, is my health really that important anyway? A little bit of cancer might not be all that bad
Buy ‘em frozen. Just as good for you, and way cheaper. Plus they won’t go bad.
